Nutritional yeast is a seasoning, not a requirement

Use it where you enjoy its savory flavor, and check the label for anything else.

Nutritional yeast has a distinct savory taste that some people love and others find overpowering. It does not need to appear in every vegan sauce to prove that the sauce belongs in the category.

Try a small amount in a bean spread, crumb topping, or creamy pasta sauce. Taste before adding more. If the dish suddenly tastes mainly of the flakes, the next adjustment may be dilution rather than another spoonful.

Fortification varies between products. Do not assume that every packet supplies the same nutrients, or use a recipe's optional spoonful as a substitute for individual dietary planning. For cooking purposes, treat it as a strong seasoning and store it as the packet advises, protected from unnecessary moisture and heat.
