
The best packed wrap is one you can actually pick up. A modest layer of hummus and finely cut vegetables usually behaves better than a mountain of filling held together by hope.
For two wraps, finely slice a handful of cabbage and grate one carrot. Toss with a teaspoon of lemon juice and a small pinch of salt, then let it stand briefly. If liquid collects, drain it away.
Spread two vegan wraps with about three tablespoons hummus each. Add the slaw in a narrow line, along with a few well-dried leaves. Fold the bottom up, tuck in the sides, and roll firmly without squeezing out the filling.
Keep chilled until eating and transport with appropriate cooling. A packed lunch does not become safe at room temperature because it contains only plants. For a meal eaten immediately, cucumber and tomato are welcome; for a longer wait, they are often better packed separately to protect the wrap from excess moisture.
