
The first pancake can be useful information. A small one shows whether the pan is too hot, the batter too thick, or the cooking surface not ready.
Use a vegan pancake recipe you trust and preheat the pan as directed. Add a modest amount of batter, then watch the edges and surface. Flip when the pancake has enough structure to lift, rather than repeatedly poking underneath from the moment it lands.
If the outside darkens before the middle cooks, lower the heat. If the batter barely spreads and the center stays heavy, check the recipe's intended consistency before adding liquid in small amounts.
Do not adjust several things after one imperfect pancake. Change the heat first if that is the clearest issue, then try again. A small test uses less batter and makes the rest of breakfast calmer.
