Canned beans are a practical starting point

Convenience leaves more room to learn seasoning and texture.

Cooking dried beans can be worthwhile, but it need not be the entry requirement for a bean-based dinner. Canned beans let you concentrate on the sauce, vegetables, and seasoning while the longest cooking step is already done.

Check the drained weight when comparing prices. Two tins with the same total weight may not contain the same amount of beans. Rinse when you want to remove some packing liquid and its flavor; keep a little liquid when the recipe benefits from it.

Handle soft beans gently. They may need only heating through in a finished sauce, not another long simmer. Keep unopened tins according to their labels and do not use damaged or swollen cans. Once opened, treat the contents as perishable food rather than as the cupboard staple they were a moment earlier.
